Prosper , named after the founder of Habitation du Simon, is an organic aged agricultural rum produced in a hybrid copper column still, then aged for 3 years in oak barrels . Bottled at cask strength at 49.6% , without filtration, this unnumbered format leaves all its space to the pure expression of the cane.

Its golden color reveals a detailed nose : fresh cane, cut grass, fresh honey , accompanied by a hint of green apple and orange peel . On the palate, cane dominates, accompanied by citrus zest , honey, toasted wood and dry spices, before a long finish, combining herbaceous, vanilla and wood.
