Learn more about rum

What is the origin of rum?

Rum originated in the 17th century in the Caribbean, when sugarcane plantations discovered that fermented molasses could be distilled. Soon, islands such as Barbados, Jamaica, and Martinique became the cradles of rum, with each region developing its own style.

What ingredients are used to make rum?

The base is always sugarcane: either its fresh juice (agricultural rum) or the molasses from refining (traditional/industrial rum). Water and yeast are added for fermentation before distillation, then sometimes caramel or spices depending on the style.

What are the main types of rum?
  • White (unaged, ideal for cocktails)
  • Amber (a few months/years in barrel)
  • Old/Aged (minimum 3 years – often 5, 7, 12 years…)
  • Agricultural (pure cane juice, mainly AOC Martinique)
  • Overproof (high alcohol content)
  • Spicy/Arranged (infused with spices or fruits).
How long does an opened bottle last?

Properly sealed, away from light, and stored upright, a rum retains its qualities for several years. After 2–3 years, a slight loss of aroma may be noticeable. For premium rums, the ideal is to finish the bottle within a year.

What is the difference between agricultural rum and traditional rum?

Agricultural rum is made from pure cane juice and offers vegetal and fruity notes; it is mainly produced in the French West Indies. Traditional (or “molasses”) rum is distilled from molasses and often offers a rounder, caramelized, and spicy profile.

How to taste rum correctly?

Serve it at 18-20°C in a tulip glass; let it aerate for 1-2 minutes, then smell it in three breaths: the first captures the alcohol, the following ones reveal the aromas. Take a small sip, swirl it to coat the palate, then look for the flavors (brown sugar, tropical fruits, spices, wood, etc.). A drop of still water can open the bouquet of very strong rums.
