The Renaissance 2021 is a pure juice white agricultural rum designed for tasting. Produced by slow fermentation (5-6 days) with oenological yeasts, it is distilled on “La Belle Aline” (copper + small column), then receives a light passage of a few days in oak barrels . Bottled at 52% , it is offered in a numbered carafe , with a print run of approximately 3,000 copies for the 2021 edition.

Its nose is a solar invitation: fresh cane, orange blossom, Italian meringue , giving a beautiful complexity. On the palate, the attack is silky and delicious , with chewed cane, vanilla, toasted floral , carried by an elegant meringue. The finish is soft, persistent , punctuated by emotions of vanilla, cane and pastry cream.
