Soleil de Minuit is a blend of 10 agricultural and traditional rums (juice and molasses), each aged between 6 and 20 years , selected for their aromatic sweetness , then refined locally at the Habitation du Simon. With a strength of 46.4% , this edition is limited to approximately 1,300 bottles .

Its bright and intense amber-mahogany color reveals a generous nose , mixing vanilla, citrus (orange), caramel, rancio. The palate, of remarkable length, is round and suave, subtly carried by fresh cane , candied orange, cocoa , allspice , and a subtle woody smoke. The finish , elegant and persistent, ends on toasted wood and dark chocolate .
